Summer Squash Pizza with Sweet Potato Crust

I don’t know about you, but there’s nothing I like better than pizza and booch and a good movie on a Friday night.

Like that’s kind of the dream…

Which is why I made this summer squash pizza with sweet potato crust for a fun Friday night; super healthy, wholesome, and freaking delicious.



1 cup mashed sweet potato

1 cup Bob’s Red Mill almond flour

1 tsp baking soda

organic pizza sauce

baby kale

1 zucchini (I recommend roasting it before hand)

1 yellow squash (I recommend roasting it before hand)

pre-cooked chicken (leftover cooked chicken works perfectly)

feta cheese

red pepper flakes

To make:

  1. Combine the mashed sweet potato, almond flour, and baking soda in a large bowl and knead with your hands until incorporated. You can also add your choice of seasonings (I just used sea salt and a little bit of sage).
  2. Press the dough into a circular shape on a parchment paper lined pizza pan and bake at 400 degrees for 18-20 minutes, until edges are golden brown.
  3. Add on the sauce, kale, zucchini and yellow squash, sliced chicken, and feta and broil for about 3 minutes.
  4. Add on the red pepper flakes and let sit for a couple of minutes to cool.
  5. Devour!

So there you have it…super easy, simple, and perfect for if you have leftover zucchini/squash or chicken. Seriously can’t get over that sweet potato crust though…you’ll just have to try it out for yourself to see what I’m talking about!
